Description
Recreate the iconic bakery experience with these thick, soft-baked sugar cookies featuring a signature chilled almond frosting. This farmhouse-style recipe produces a melt-in-your-mouth texture that is perfectly balanced by a sweet and creamy pink topping.
Ingredients
- 1 cup salted butter, softened
- 1 1/4 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup salted butter, softened (for frosting)
- 3 cups powdered sugar
- 1/2 teaspoon almond extract (for frosting)
- 2 tablespoons milk
- Pink food coloring (optional)
Instructions
- Preheat your oven to 350°F and prepare a baking sheet.
- In a stand mixer, cream together the softened butter and granulated sugar on medium-high speed until light and fluffy.
- Add the eggs, vanilla extract, and almond extract, mixing until the dough is smooth.
- Slowly incorporate the all-purpose flour and baking powder on low speed until just combined.
- Use a large cookie scoop to portion the dough, place on the baking sheet, and gently flatten each ball with your palm into a thick disk.
- Bake for 11 to 13 minutes until the centers are puffed and no longer glossy.
- Allow the cookies to cool completely on the baking sheet.
- Whip the frosting butter until smooth, then gradually add powdered sugar, almond extract, milk, and food coloring until creamy.
- Spread a thick layer of frosting over the cooled cookies and chill in the refrigerator for at least one hour before serving.
Notes
To achieve the classic bakery look, use a flat-bottomed glass dipped in sugar to flatten the dough balls evenly before baking. If the frosting is too stiff, add milk one teaspoon at a time until it reaches a velvety, spreadable consistency. These cookies stay fresh and delicious for up to five days when kept in an airtight container in the fridge.
